Homemade Jammy Heart Biscuits

These jammy heart biscuits are my favourite thing to make as an added little extra for a special occasion, a thank you gift, or even just tea with the girls.

This recipe usually makes me 14 biscuits based on the cookie cutters I use but you can, of course, make them any size you like.

What you will need:
  • 300g Plain White Flour,
  • 125g Icing Sugar (plus a little bit extra for dusting)
  • 225g Unsalted Butter
  • 2 Medium Egg Yolks
  • 1 tsp Vanilla Extract
  • Strawberry/Raspberry Jam (whatever you prefer)
  • 1 Medium Heart Cookie Cutter (7cm)
  • 1 Small Heart Cookie Cutter (3cm)

Step 1. In a large bowl, mix together the butter and sugar until it is pale and fluffy (I would recommend using an electric mixer if you have one). Add the egg yolks, vanilla extract and flour and mix until you see the dough start to form, then, get your hands in there and finish mixing until you have a smooth dough. Wrap in clingfilm and leave for 1 hour to firm.

Step 2. Set the oven to 180°C/350°F/Gas Mark 4. Sprinkle flour over your work surface to prevent the dough from sticking and roll out half of the dough to a thickness of roughly 3mm. Using the medium sized cookie cutter, cut out as many hearts as you can. These will be the base of the biscuits. Place on a baking sheet and put into the oven for 10-15 minutes (Keep an eye on them, time varies from oven to oven but you want them to go a nice golden colour)

Step 3. Repeat step 2 making sure you have the same quantity of hearts as your first batch, but this time, after cutting out your heart shapes, use the smaller cookie cutter to cut out the centre of each heart. These will be the tops of the biscuits. Again place in the oven for 10-15 minutes, keeping an eye on them.

Step 4. Once you have removed the biscuits from the oven and left to cool, take the base layer of biscuits and drop about a teaspoon of jam in the centre before placing the second layer of biscuits on top. Lightly dust with icing sugar to finish.

There you have it, your very own homemade yummy jammy biscuits. If you want to mix it up a bit you could do a range of different shapes including hearts, stars and circles, and you could also use other flavours of jam. I hope you enjoy making these.
