Easy Peasy Pretty Party Bites

Looking for a really cheap and easy party snack recipe? You have come to the right place!!

Now, this is an absolute classic, I know. I don’t think there is anyone out there who didn’t make rice krispie cakes when they were children but who says they are just for kids?

The other great thing about these party bites is that there isn’t really a set recipe, I was able to adjust the recipe to work with what I had left in the cupboard so they are the perfect last minute dish if you are looking to bulk up the menu a bit.

(The below recipe is what I used to make this particular batch of party bites, but there are absolutely loads of recipes available online, including vegan, gluten free or just healthier alternatives)

I used an 11 x 8 inch ceramic dish which made 20 squares.

What You Will Need:

  • 65 grams unsalted butter
  • 150g mini marshmallows
  • 120g rice krispies
  • Chocolate/Sprinkles/Decorations

Step 1. Melt the butter in a large saucepan over a low heat.

Step 2. Add 75g marshmallows to the melted butter and stir until they have all melted into a smooth mixture.

Step 3. Take the pan off the heat and very quickly add the rice krispies and stir until they are all coated in the butter mixture. (You can also add marshmallows into the mixture here if you want an extra gooey texture)

Step 4. Pour the rice krispies into the dish you have, spread evenly and pat down with a wooden spoon or spatula until they are nice and compact.

Step 5. Cut into squares with a sharp knife, decorate as you wish and display on a nice cake stand or plate ready to serve.

How I decorated mine…

For a simple finish, just add some of the remaining marshmallows to the top. I used three on each bite.

For a colourful finish, pour a pot of hundreds and thousands into a bowl and dip the top of the bites into them until they are covered.

For a chocolatey finish, carefully melt the chocolate of your choice in a bowl and dip the bites into it before placing in the fridge to set. It is very important that you dip the bites into the chocolate and don’t pour the chocolate on top as you won’t get a clean finish (I tried it this way and the chocolate just soaked into all of the gaps and looked a bit messy) I added marshmallows to mine as well but you can add anything, Chocolate Curls, Maltesers, Smarties, Mini Eggs, whatever works for the occasion. 

…and there you have it, probably one of the easiest and cheapest party bites ever!! Have fun making yours!
