This is one of my all-time favourite recipes. It is so quick and easy to make, is the perfect vegetarian dish for any lunch or dinner party and can be served hot or cold so it can be prepared the day before serving if needed. It literally takes about 10 minutes to prep and 20 minutes to cook so it is also good if you’re having to throw something together last minute.

What you will need:
- 1 Sheet Puff Pastry
- Olive Oil
- 1 Finely Chopped Onion
- 1 Crushed Garlic Clove
- 125g Fresh Spinach
- 250g Ricotta Cheese
- 1 tsp Grated Lemon Grind
- Handful Cherry Tomatoes
- Handful Walnuts
Step 1. Pre-heat Oven to 240℃. Heat oil in a small frying pan and lightly cook onion and garlic together before transferring to a large mixing bowl.
Step 2. Add spinach, ricotta cheese and lemon grind into the bowl and mix well.
Step 3. Lay puff pastry out on a clean surface and spread mixture on top, starting from the centre and working your way out.
Step 4. Starting from one corner, slowly fold the pastry around the edge into a circle shape, lightly twisting as you go.
Step 5. Place in oven for 20 minutes.
There you have it. Easy as that. You can add or take away any toppings you like and you could even make mini tartlets by cutting the pastry into 4 squares prior to adding the mixture and placing in the oven.
